<h2>Chicken Adobo with Pineapple</h2>

<ul>
<li>2 pcs mock chicken or any vegetarian meat, cut into big cubes</li>
<li>2 potatoes, chopped to ½ to 1 inch pieces</li>
<li>3 carrots, chopped to 1/2 inch pieces</li>
<li>1 cup pineapple chunks</li>
<li>5 cloves garlic, crushed</li>
<li>¼ cup vinegar (I used apple cider vinegar)</li>
<li>½ cup soy sauce</li>
<li>2 Tbsp brown sugar</li>
<li>3 pcs bay leaf</li>
<li>2 Tbsp black peppercorns, crushed</li>
<li>2 Tbsp vegetable oil </li>
</ul>
<p>Method:</p>
<ol>
<li>Fry the mock meat until brown. Set aside.</li>
<li>Sauté garlic in a pot until fragrant. Add potatoes and carrots and sauté for about 1 minute and add ¼ cup of water. Add soy sauce, vinegar, bay leaves and black peppercorns to pot. Stir well. Cover pot and bring to a boil. Lower to medium-low heat and simmer for 25 minutes or until potatoes and carrots are tender.</li>
<li>Add mock meat and pineapple chunks. Then simmer for some minutes.</li>
<li>Garnish with bay leaves/li>
<li>Serve with steam rice. </li>
<li>Makes 2 servings.</li>
